How a café gets on this list

Two tests, both of which have to pass. It must hold 4.5 stars or better from at least 100 Google reviews, so one good week can't carry it. And there has to be evidence it pours a flat white — a review that names the drink, a flat-white search in that area returning it, or a tip from a regular. Chains are left out. The map has the full picture.
